In effect they can fill one of the Memory Slots with a perfect recreation of their ancestor's mind, as it was at the point of conception. Dredging up Ancestral memories takes a long while, it requires five Successes per dot of the target's Sheol (at whatever point the mind is preserved), roll Wits + Occult + Sheol at 6 hours per roll. A Leviathan can look back at most Sheol Generations, though they can look through memories of an ancestor looking through an even older ancestor's memory. So far no one's found a chain that goes back nearly far enough to find or disprove the Progenitors.
